I recently opened a coconut I got 3 years ago and ate it. Surprisingly, it was not rotten just dry,will I die?
Do coconuts ever rot....? I mean if ever left unopened not out in the air.

"Will I die?" is probably a question you should have asked before you ate it. Three years is a long time even for canned foods. If you don't get sick within the first 24 hours you should be O.K.
If you start to feel nauseous, vomit or get diarrhea you should go to a Doctor. You could have some type of food poisoning.
