What is the significance of marinating chicken in Lemon Water?



I would really like to know what it does for the chicken. I have Maya Angelo's Cookbook and in it her recipe for "Suffocate Chicken" calls for you to first place all of the chicken pieces in a shallow dish and cover it with water and juice from lemons and place it in the refridgerator for one hour then wash all lemon water off and proceed with the rest of the process. I've done it and the chicken is really good!! No wonder Oprah named it one of her most favorite dishes to eat and why she was up in the middle of the at Maya's house eating "Suffocated Chicken" !! If anyone out here can answer this question truthfully and honest I will gladly give them the TEN POINTS!!!

The acid in the lemon juice denatures some of the protein in the chicken, making it more tender. Plus, it tastes good!

I think it tastes the chicken taste more tenderand succulent. It apparently takes the smell off as well, and you can taste the difference
