1 package Betty Crocker® Sunkist® lemon bar mix
3 tablespoons fresh lemon juice
1 teaspoon grated lemon peel
1/2 cup vanilla-flavored protein powder
1 container (8 ounces) fat-free cholesterol-free egg product
Powdered sugar, if desired


1. Heat oven to 350ºF. Press Ready-Mixed Crust (dry) from lemon bar mix in bottom of square pan, 8x8x2 or 9x9x2 inches. Bake 10 minutes.

2. Add enough water to lemon juice to equal 1/2 cup. Place Filling Mix from lemon bar mix, lemon peel and protein powder in large bowl. Stir in egg product and lemon juice mixture with wire whisk until smooth. Pour filling over hot crust.

3. Bake 25 to 30 minutes or until top just begins to brown and center is set. Cool completely, about 2 hours. Sprinkle with powdered sugar. For 16 bars, cut into 4 rows by 4 rows.

EASY - CHEESY LEMON BARS

1 pkg. Pillsbury Plus lemon cake mix
1/2 c. butter, melted
1 egg
1 pkg. Pillsbury Rich' N Easy lemon frosting mix
1 (8 oz.) pkg. cream cheese, softened
2 eggs

Preheat oven to 350 degrees. Grease bottom only of 13 x 9 inch pan. Combine cake mix, butter, and 1 egg. Stir until moist. Pat into pan. Blend frosting mix into softened cream cheese. Reserve 1/2 cup for frosting baked bars. Add 2 eggs to remaining frosting mixture. Beat 3 to 5 minutes at high speed. Spread over base. Bake at 350 degrees for 30 to 35 minutes. Cool; frost. Cut into bars. Refrigerate leftovers. Makes about 36 bars.

EASY LEMON BARS

1 pkg. angel food cake mix (one step) - must be one step
1 can lemon pie filling

Mix well. Bake in greased jelly roll pan at 350 degrees for 20 minutes or lightly brown. Frost with powdered sugar frosting with a little lemon added.

EASY CHEESY LEMON BARS

1 pkg. lemon cake mix
3 eggs
8 oz. pkg. cream cheese
1/2 c. butter, melted
1 can lemon frosting

Combine cake mix, butter, and 1 egg; mix with fork until moist. Pat into 9 x 13 inch pan. (Pan should be greased on bottom only.) Blend frosting mix and softened cream cheese. Reserve 2/3 cup of this mixture for frosting. Add 2 eggs to balance of the mixture and beat. Spread over cake mixture. Bake at 350 degrees for 35 minutes. Cool. Frost with reserved frosting mixture. If you want a more lemony taste, you can add a little lemon juice. Put in refrigerator to keep lemony taste.
