* 2 1/2 to 3 1/2 pounds chicken pieces
* 1/2 cup flour
* 1 teaspoon salt
* 1/2 teaspoon ground black pepper
* 2 tablespoons vegetable oil
* 1 cup orange juice
* 2 tablespoons honey
* 2 tablespoons vinegar
* 1 tablespoon chopped parsley
* 1 can (15 to 16 ounces) sliced peaches, drained

PREPARATION:

Wash chicken pieces and pat dry. Combine flour, salt, and pepper in a shallow bowl or food storage bag. Coat peaches with the flour mixture.

Heat oil in a Dutch oven or deep heavy skillet; brown chicken on all sides. Add the orange juice, honey, vinegar, and chopped parsley. Cover and bake (if necessary, transfer to a baking dish or ovenproof pan) at 350° for 45 minutes. Add peaches; bake 5 minutes longer.
Serves 4.

Empty about 1/2 cup out of a can of beer, put a large sprig of fresh rosemary (available in the produce section of most grocery stores) a clove of garlic, stuff the can up the chicken and place on a pan in the oven (kinda have to balance the bird and then bake at about 350 until bird is done. Oh, yeah, rub skin with oil, and salt and pepper. Garlic is optional, tarragon is great, sage or experiement. Another one is to either cut up the chicken into serving pieces or buy one all cut up, brown then put in a baking dish, add 2 cups uncooked rice, mix 1 large family size can of cream of mushroom or cream of chicken soup...oops mix rice and soup with 3 cups water pour in baking dish BEFORE you put the chicken in then put chicken on top and cover really tightly with tin foil and bake at 325 until rice is done, add more water if it gets too dry.

Try this, it's delicious and easy! Take whatever kind of chicken you prefer(breasts,legs,thighs,bon... chunks,etc.)Put into a bowl and pour on your favorite ranch dressing(I like hidden valley)let it sit in the dressing all day, then coat with breadcrumbs and bake in the oven at 400o for 30 to 45 min. I make this when I can't grill. You can sustitute the types of dressing you use also. Enjoy!!!!
Here are 2 different approach:
1/ flour!
- Ready a huge amount flour and add water. Seasoning(any herb or dressing) the chicken for taste and cover the whole bird.
- Left it in the over for 1hour on 400C.
- FYI only, in China, someone used mud!!!
2/ salt!
- Ready a huge amount of sea salt and some egg white. Mixed well and cover the chicken.
- Left it for 300 in over for 45min.
Dijon-Baked Chicken with Rice and Broccoli

If you forget to marinate this overnight, don't worry; it's still great if you cook the chicken in the sauce as soon as you make it. It's just better when it marinates.

10 to 12 boneless skinless chicken thighs (about 1 3/4 pounds)
1 tablespoon curry powder
3 tablespoons frozen chopped onions
1/2 teaspoon crushed red pepper flakes
1/2 cup honey
1/2 cup Dijon mustard
2 tablespoons soy sauce
1 teaspoon Asian-style hot chili sauce (can be chili-garlic sauce)
1 1/2 cups basmati or white rice
3 cups water
5 cups frozen broccoli florets
1/8 teaspoon your favorite supermarket-style seasoning mix

The night before: Unravel thighs to flatten and scrunch together in a large shallow oven-safe pan. Combine the following in a small mixing bowl in this order: spices, honey, Dijon mustard, soy sauce, and hot chili sauce. Stir. Pour evenly over chicken. Flip the chicken around with a fork until each piece is well coated. End by making sure the rough side of the thigh is down. Cover with plastic wrap and refrigerate overnight.

The next day: Preheat oven to 350 degrees F.

Combine rice and water in a larger oven-safe pot. Stir. Cover and place in preheated oven.

Turn chicken over with a fork. Place in preheated oven, beside rice. Set timer for 50 minutes. About halfway through the cooking time for chicken, I like to flip the chicken over again. When the timer rings for chicken, turn off heat but leave it in the oven.

Rinse broccoli in colander. Place in a microwave-safe pot or casserole dish with lid. Cover, then microwave at high for 5 minutes. When timer rings, add seasoning mix to broccoli.
