I've posted this in a few other places - its gotten me a couple of best answer ratings! I highly reccomend it, and any other recipes on Epicurious. Do a search on the site for the type of recipe, ingredients, etc. that you want!
SEARED SALMON ON BABY SPINACH
2 7-ounce skinless salmon fillets
2 tablespoons (1/4 stick) butter
3 large shallots, sliced
1 1/2 tablespoons chopped fresh tarragon
3 ounces baby spinach leaves
1 pound cremini mushrooms, thinly sliced
1/3 cup dry white wine
1/4 cup whipping cream
Sprinkle salmon with salt and pepper. Melt 1 tablespoon butter in medium skillet over medium-high heat. Add salmon; sauté until just opaque in center, about 4 minutes per side. Transfer to plate.
Melt 1/2 tablespoon butter in same skillet. Add half of shallots and saute until translucent. Add mushrooms and saute until tender. Add half of tarragon and saute for 30 seconds Increase heat to high; add half of spinach and toss 30 seconds. Add remaining spinach; toss until wilted. Divide between plates.
Melt remaining 1/2 tablespoon butter in same skillet over medium-high heat. Add remaining shallots and tarragon; sauté 30 seconds. Add wine and cream and boil until sauce is thick enough to coat spoon, about 3 minutes. Season with salt and pepper. Return salmon to skillet; simmer 1 minute. Arrange salmon with sauce atop spinach.
This is so yummy. I've made it for my boyfriend several times, and plan to make it for him for Valentines Day. Its ridiculously simple and tastes like something you'd find in a fine dining restaurant. I usually serve it with roasted fingerling potatoes coated in olive oil, oregano (fresh) and garlic.

rosemary -oregano roasted cornish hens.
you get some cornish hens and thaw them [you can usually by them in packs of two one bird per person works well.]
take half a cup of butter and add 2 teaspoons garlic 2 teaspoons onion powder a teaspoon of oregano and a teaspoon of rosemary. mix this and then seperate the skin from the meat of the breast of the hen. Put this inside that rubbing it evenly throughout the top side on all hens. Rub the outside with regular butter not the herb butter and salt and pepper. put on a wire rack in a 400 degree oven for 35 minutes-45 minutes. or until golden brown and cooked through.
meanwhile for sides either make some parmesan noodles or mashed potatoes.. with a canned vegetable of your choice [corn, green beans, or great northern beans work well]
parmesan noodles are simple you cook some egg noodles and drain them.. add butter [enough to coat once melted] parsley flakes [not too much] and grated parmesan cheese until it starts to get melty and slightly gooey.. add a splash of cream and stir until its smooth and coats all the noodles well.

Chicken Zarape
Dice 1\2 onion, 2 large tomato chopped, 2 small serranos finely chopped, handfull of cilantro (coarsely chopped) and the juice of two limes, Mix in a bowl.
Shred 2 cups of Monterrey Jack cheese.
salt and pepper to taste.s
Slice 2 boneless chicken breasts into bite size. Saute in veg oil until golden brown, add veggies (pico) to chicken and cook until onions become translucent. Add cheese until melted. Server with flour tortillas.
