I'm making a chocolate pudding pie...do you let the pie cool before putting the merigue on?



I don't remember if you put the merigue on while the pudding is still hot and bake it or if you let the pie cool first...thanks

I just looked up on a few lemon meringue pie recipes, and they all say to put the meringue on top of the hot lemon mixture then bake, so you should be fine not waiting for it to cool. Cheers, Garth

Hello. You let the pie cool first than make your meringue.A nice tip is to take a torch after you apply the topping of the pie and you carefully brown it with the torch. Mark b.

Cool the pie before applying the meringue to the top. You can bake it in a salamander or even use a fire torch to brown it.

Keep the filling warm while preparing the meringue. The meringue should be placed on warm (not hot or cold filling). Make sure the meringue touches the crust, seal to edge. Bake in a preheated 350 degree oven for 15 minutes. Cool on a rack for about an hour then it should be chilled for at least three hours before serving. For best results serve the pie the day it is prepared. If you need to hold the pie for longer than six hours make sure it is well covered.
