For Stir-fry serves 2
Seasonings:
1/2 tablespoon Garlic or 1 tablespoon green onions
1/3 teaspoon salt
dash of pepper
Sesame oil (optional)
Remove wilted leaves of bok choy then cut each one into four or six pieces; rinse and drain. Heat 1½ Tablespoon oil, stir-fry garlic or green onion until fragrant. Add bok choy and stir-fry briefly. Add 1/3 cup water, salt, pepper, and sesame oil. Cover and cook until steamy; continue to cook for 2 minutes. Remove and serve.
Note: Using high heat for stir-frying may preserve color of vegetables, but add water when necessary to avoid buring. Covering pan during cooking may prevent spattering and shorten cooking time.

Baby bok choy is delicious raw in salads.
It's a member of the cabbage family, so like any other green leafy veggie, you can sauté, steam, stir-fry, add to soups.
I like taking larger leaves, wilting them for a few seconds and making wraps using leaves, instead of tortillas - you can fill with cheese, tuna, veggies - the possibilities are endless.

Easy recipe when you don't have a lot of time - Brown 1 pound of lean ground beef in a heavy pan. Drain and add 1 small, chopped onion. Cook until onion is wilted. Add a couple pounds of chopped baby bok choy, add salt, pepper, 1/2 cup of water, dash of fish sauce and cover pan for 15 - 20 minutes to steam. Stir altogether and serve over rice.
