Cooking asparagus in the oven?
Heard of a way to cook it with some butter and parmesain cheese; however, at what degree, how long and covered or not - can anyone help, or other ideas?
Answer:
Easy! Place cleaned asparagus in a single layer on a baking sheet. Drizzle with olive oil (or butter), plus throw on some chopped garlic, if you'd like. Sprinkle on some salt & pepper. Roast (uncovered) on baking sheet at 400 F for about 10-12 minutes. Sprinkle on some parmesan & return to oven for another 5 minutes or until cheese is melted and golden.
I do it all the time - fave way to make it!
I imagine it would be like roasting... they discuss it here:

Asparagus with mustard sauce
Preheat oven 325F.
Rinse asparagus and place on foil; dot with margarine. Bring 2 edges of
foil together and fold down, allowing space for heat circulation and expansion. Fold up ends to seal.
Place foil packet on a cookie sheet.
Bake until asparagus is crisp-tender, 30 to 35 minutes.
Open foil; season with salt and pepper.
To make sauce, combine sour cream, vinegar, mustard, sugar and red pepper
in a small microwave-safe bowl. Microwave on HIGH until warm, 1 to 2
minutes. Serve sauce over asparagus.
or
1 lb. fresh-trimmed asparagus
2 Tbsp. butter or margarine
salt and pepper to taste
Directions:
Place asparagus on a large piece of heavy-duty aluminum foil. Dot with butter.
Bring edges of foil together and seal tightly; place foil packet on a baking sheet.
Bake at 350°F for 25-30 minutes or until asparagus is crisp-tender. Carefully open foil to allow steam to escape. Season with salt and pepper. Enjoy!
Yum.
Wash and trim as usual. Dry well. Sprinkle with salt, pepper and a bit of extra virgin olive oil. Roast at 425 or so for at least 10 minutes, and keep then checking. Do not cover - that's not roasting but steaming or braising.
You want it still bright green, but to your taste, slightly underdone, as it will continue to cook for a moment. Serve it hot or cold.
No other seasoning needed.
I do something like this and I do it at 350º for about an hour. Cover it for the first 45 minutes or so and then uncover it for the rest of the time, this will brown the top. Also boil it for a few minutes first and rinse it off with ice water, this will keep the asparagus really green. Good luck!
