9 inch tortilla? I've never seen that size. I've seen 6in (taco size) and 10 inch (burrito).

You can use up to two large eggs (very full tortilla) or One jumbo egg. I opt for jumbo over large, simply because 2 large eggs wind up being 9-10 gms of fat, and 1 jumbo is perfectly satisfying, with benefit of only 5 gms of fat.

Ok, sorry to get all technical. Use 1/4 onion, and 1/2 tsp of olive oil and carmelize onions in a pan. (very low heat and lid for about 3 min, onions soften and become sweet) Scramble egg in bowl with 1 tblsp of water (Water will evaporate, leave no calories, but make eggs fluffy) While stiring eggs into pan, increase heat to med high and add cheese to wet mixture and continue to stir and scrape bottom of pan while allowing the uncooked eggs to run onto hot pan. You can also add cubed ham, chicken, or (if you dare) smoked salmon! When eggs are fluffy and dry, removed from heat and don't CENTER the mixture on burrito: It should be in the middle but slightly to the left. Add a little more cheese to your liking. Lift right side of burrito shell and fold 2inches towards the left. While holding right side with right hand, take bottom with left and fold up to the top. Proceed to roll bulk upwards.

Add fresh salsa for extra zing!
