Because fat and sugar sometimes make people feel good and they taste good, because we are accumstomed to eating them and have childhood memories of eating cake as well.
I know some people who only feed their children healthy food, and, on the third birthday, gave their kids some agave-sweetened whole-grain cupcakes, which were very delicious, but the children were not interested - they preferred whole foods, like broccoli and beans.
So it's partly conditioning and partly mental/physical/emotional.
It satisfies our sweet tooth
It's used on all happy occasions (birthdays, weddings, graduations)
It comes in many delicious flavors
Anyone can make it (it can come from a box)
Frosting (need I say more)
Goes really well with Ice cream
because its got plenty of fats and sugars, which makes it quite delicious
