CHIMICURRI SAUCE:

1 Cup (packed) fresh flat-leaf parsley; chopped
1/2 Cup Olive Oil
1/2 Cup Red Wine Vinegar
1/4 Cup Onion; finely minced
1 Tablespoon Garlic, finely minced
1 Tablespoon Dried Oregano
1/2 teaspoon dried red chili pepper (add more if you want some kick)
1 1/2 teaspoon salt
1 teaspoon ground black pepper
1/4 cup sweet red pepper; finely minced
1 teaspoon laurel or bay leaf flakes

Mix all of the ingredients well and allow to rest for at least 2 hours or overnight.
