Let's start from the beginning, when you're putting meat into the freezer after buying it, you should double or even triple wrap it in plastic wrap to protect it from freezer burn and keep moisture out.
That said, when you're ready to cook, take the meat out of the freezer the night before and put it in the refrigerator (if cooking a larger amount than say for a family of four, take it out two days in advance). You shouldn't unwrap it because it could absorb odors from the refrigerator and depending on what kind of meat it is, it will keep the blood from spilling out of the package once it's defrosted.
Freezing does not cause meat to lose flavour as long as it hasn't been frozen too long...no more than 3 months is recommended for meats. Always mark the date you put food in the freezer with a permanent marker so you'll know when food is getting too old to eat.
Don't try to refreeze foods that have already been defrosted either
DO NOT thaw on the counter top...this will allow bacteria to grow and could make for some serious health problems.
Once you're ready to cook, don't put the meat in first if it's cut into the typical strips for stir fry. Put in harder vegetables first like carrots, broccoli, etc. and then add in your more delicate vegetables and your fully thawed meat. Smaller pieces of thawed meat will not take that long to cook and putting them in first will dry them out.

best way is to fry it again~ microwaving it will spoil your stir fry meat The trick is not to defrost. Heat up your pan on high heat, add a little oil and do a quick fry. If you defrost, you will end up losing all the flavour with the juice. Doing a quick fry will seal the flavour in.
I always add the frozen meat with a 1/4 cup or so water to it and fry again with lid.
