Sounds like a frozen dessert. To stop it melting you would have to reduce the amount of coconut oil and add something that's going to make it more solid. Any more details you have about the ingredients?
Coconut oil, aka coconut butter, has a melting point of 20°-25°C / 68°-78°F... Even if you keep the bars cold for storage, almost the moment you handle them at room temperature, with body heat and ambient heat combined, they'll disintegrate very quickly. The stuff is simply 'built that way'... :-(
