Wanting to grill vegetables, need a marinade?
Trying to come up with a vegitarian recipe for a friend of my. We want to grill some vegetables. I'm thinking of a kind of kabob, using a marinade I once used with shrimp, but I don't have the recipies. It was soy-based, with garlic, ginger, corriander and more. Anyone have a similar recipe? Or any other ideas?

Try this:
-2 Tbsp balsamic vinegar
-1Tbsp olive oil
-dash of mustard (powder or regular)
-dash of hotsauce (tabasco or sriraki)
-1 Tbsp lemon juice
-dash of soy sauce
-dash garlic powder
-dash of ginger root powder
Play around with the amounts. It's great as a salad dressing too!

A Tasty marinade for grilled vegetables. the recipe comes from Bon Appetit.
2/3 cup olive oil
1/3 cup balsamic vinegar
1/4 cup minced onions
1 tablespoon chopped fresh basil
1 teaspoon minced garlic
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
1 Cup Marinade
Combine all ingredients and mix well.
Marinade cut vegetables for 3 to 4 hours and then grill or brush marinade onto vegetables as you grill.
Yield 1 cup marinade. You don't even really need a marinade. Many times I just spray with a little olive oil and sprinkle balsamic vinegar as I am grilling--this also works great in a saute pan with asparagus, this way it doesn't get mushy, but stays a beautiful green and is crisp
